Chitin is widely distributed in nature and is the second most abundant polysaccharide after cellulose. This polysaccharide is mainly found in the exoskeleton of crustaceans and insects. It is also found in marine invertebrates, fungi and yeasts. Industrially, it is produced from crustacean shells, which are very abundant waste products in the seafood industry.
